Fruit Jam - Lillian
Knutz
7 C. fruit (any)
7 C. sugar
1 sm package of jello, any flavor
Mix the fruit and sugar, boil over
med/low heat 7 minutes. Remove from heat, add dry jello,
mix well. Cool. Freezes well.
Strawberry Jam - Lillian Knutz
4 C. fresh crushed strawberries (2
quarts whole berries)
2 C. sugar
1 1/3 C. Karo light corn syurp
In large saucepan, mix together
strawberries, sugar and corn syrup. Quickly bring to a
boil over medium heat, stirring until sugar is dissolved.
Cook rapidly 30-40 minutes, or till jam sheets from metal spoon
and becomes clear in color. Stir occasionally to prevent
sticking and skim with metal spoon as foam rises to the surface.
Remove from heat, cool 5 minutes, stirring gently. Pour
into hot sterilized jars. Seal according to manufacturer's
directions.
Makes 4 1/2 pt jars

Good Brownies - Lillian Knutz
2 C. sugar
1 C. shortening
4 eggs
6 T. cocoa
2 C. flour
1 tsp. salt
2 tsp. vanilla
Nuts (optional)
Mix all ingredients except nuts;
when mixed, add nuts if desired. Bake on a large cookie
sheet at 350F, for about 45 minutes.
Frost while hot with:
1 C. powdered sugar
2 T. cocoa
1 T. butter
hot coffee or milk to make of
spreading consistency
Apple
Crisp - Lillian Knutz
6-8 sliced, peeled apples
1/4 C. water
3/4 C. sugar
1/2 C. flour
1 tsp. cinnamon
6 T. butter
Place sliced apples in pan, add
water. Cream remaining ingredients and sprinkle on top of
apples. Bake uncovered 1 hour.
Banana
Oatmeal Cookies - Lillian Knutz
1 1/4 C. flour
1 tsp. baking soda
1 C. softened butter
1/4 C. sugar
3/4 C. packed light brown sugar
1 pkg instant banana pudding mix
2 eggs
3 1/2 C. quick oats
Mix flour and baking soda.
Combine butter, sugars, pudding mix; beat till smooth.
Gradually add flour mixture, then stir in oats and raisins (if
desired). Dough will be stiff. Drop by rounded
tablespoonfull onto ungreased cookie sheet, about 2" apart.
Bake at 375F for 10-12 minutes. Makes about 5 dozen.
Cocktail Meatballs in Sauce - Lillian Knutz
1 lb. hamburger
2 T. bread crumbs
1 beaten egg
1/2 tsp. salt
1/2 C. chopped onion
1/3 C. chopped peppers
2 T. margarine
2 T. brown sugar
1 can tomato soup
1 T. vinegar
1 T. Worcestershire sauce
1 tsp. prepared mustard
dash of pepper sauce
Combine hamburger, bread crumbs,
egg, and salt. Form into meatballs 1/2" in diameter, ~ 50
meatballs. Cook onion and pepper in butter till tender.
Stir in remaining ingredients and pour over meatballs.
Bake at 350F for 20 minutes.
Delicious Cheeseburger Loaves - Lillian Knutz
2 C. cornflakes, crushed
1 egg
1 C. stewed tomatoes
1 tsp. salt
1/8 tsp. pepper
1 lb. hamburger
cheese slices
Combine crushed cornflakes and egg
in mixer bowl. Cut up tomatoes and add to egg mixture,
along with salt and pepper. Beat well. Add meat and mix
only until combined. Shape into 6 loaves 4" long.
Place on cookie sheet that is covered with foil. Bake at
350F for 30 mint. Top with cheese slices and return to
oven till cheese melts.
Hamburgers - Lillian Knutz
1 1/2 lb. hamburger
1 1/2 tsp. salt
1 1/2 tsp. dry mustard
1 1/2 tsp. Worcestershire sauce
1 egg
1/3 C. chopped onion
3 T. chopped green pepper
1/3 C. crushed crackers
Combine hamburger, salt, mustard,
Worcestershire, egg, onion and green peppers. Form into
patties. Roll patties into crushed crackers and fry till
done.
Easy
Oven Stew - Lillian Knutz
2 lb. Beef, cut up
1/4 C. flour
2 tsp. salt
1/4 tsp. pepper
1/4 tsp. paprika
2 T. vegetable oil
4 small quartered onions
4 small carrots, cut into 1"
pieces
4 small potatoes, halved
1 C. sliced celery
1 C. water
2 cans (15 oz) tomato sauce
Combine flour and spices in a
ziploc bag. Drop in pieces of beef, a few at a time
depending on size, and shake to coat. Mix wil oil in a 3qt
casserole. Bake, uncovered, at 400F for 30 minutes,
stirring once. Add remaining ingredients, mix well.
Cover and bake at 350F for 1 3/4 hours. Makes 6 servings.
Casserole - Lillian Knutz
1 can cream style corn
1 package frozen chopped broccoli
2 T. melted butter or margarine
2 slightly beaten eggs
salt and pepper to taste
Topping:
2 T. butter
bread crumbs
Combine all ingredients and place
in a greased small casserole dish. Melt 2T. additional
butter and toss with some dry bread crumbs. Sprinkle over
top and bake at 350F for 45 minutes.
