Potato Salad

 

3 C. mayonnaise

1/4 C. sweet pickle juice

1/4 C. sour cream

1/2 C. sugar

3/4 C. milk

1/4 tsp. mustard

Pickle relish

3 1/2 lbs. cooked potatoes without skins

1 dozen large eggs, hard boiled

 

Combine and enjoy!

 


 

Sweet Potatoes

 

1 C. brown sugar

1/4 C. oil

1/4 C. water

1/2 tsp. salt

Sweet Potatoes

 

Mix brown sugar, oil, water and salt.  Bring to a boil and pour over sweet potatoes in a baking pan.  Bake 350F 30 minutes.

 


 

Scalloped Potatoes

 

2 lbs. frozen hash browns

1/2 C. margarine (divided)

2 T. minced onion

1 can cream of chicken soup

1 pt. sour cream

1 C. grated cheddar cheese

2 C. crushed cornflakes

 

Melt half of margarine, add soup, sour cream and cheese. Mix with hash browns and put in baking pan.  Mix remaining margarine with corn flakes and sprinkle over top.  Bake 35-F about an hour.

 

Serves 12.


 

Delicious Green Beans

 

1 can green beans

5 slices bacon, chopped fine

1 small onion, hcopped

1 can cream of mushroom soup

1 T. cream

 

Fry bacon crisp, onion can be fried till slightly brown at same time.  Drain off all fat, add soup diluted with cream.  When hot, add thoroughly drained beans.  Simmer 10-15 minutes and serve.

 


 

Calico Beans

 

4 slices bacon, cut in 1" pieces

1 large onion, chopped

1/2 C. catsup

1/3 C. brown sugar

2 Tbl. vinegar

1 Tbl. mustard

 tsp. salt

1 can (16 oz) pork and beans

1 can (16 oz) lima beans, drained

1 can (15.5 oz) butter beans, drained

1 can (15.5 oz) kidney beans, drained

 

Brown bacon and onion in large frying pan.  Add catsup, brown sugar, vinegar, mustard and salt, stirring to combine.  Combine sauce with pork and beans, lima beans, butter beans and kidney beans.  Cook covered in 2 1/2 quart casserole dish in 325F oven for 30 minutes.  Remove cover and cook another 30 minutes.
