Mini Fried Pies


2 tubes of refrigerator biscuits

1 can cherry pie filling


Preheat oil to abotu 375F.  Separate biscuits and roll each out flat.  Spoon a small amount of cherry pie filling in the center of each biscuit, fold over in half, and use a little water to get the edges to stick.  Seal with a fork.  Fry till golden brown.



Light Batter


3/4 C. cornstarch

1/4 C. flour

1 tsp. baking powder

1/2 tsp. salt

1/4 tsp. pepper

1/2 C. water

1 egg, slightly beaten


Mix cornstarch, flour, baking powder, salt and pepper.   Mix water and egg, and combine with dry ingredients.  Dip item to be deep fried into batter and fry in oil in deep skillet or deep fryer at 375F.






2 C. hot water

1 C. sugar

2 C. cold water

1 pkg jello, any flavor

1 pkg Koolaid, unsweetened, any flavor


Boil hot water, let boil for 1 min.  Add jello.  Make sure it is dissolved.  Add sugar, dissolve.  Add Koolaid and dissolve.  Add two cups of cold water and stir.  Pour into popsicle molds and freeze.  Makes about 2 dozen per batch.
