Egg in a Nest


1 egg

1 slice of bread



Cut the center out of the bread with a biscuit cutter.  Butter both sides of the bread (and the center piece) and place in a hot skillet.  Crack an egg in the center hold of the bread, and cook till done, flipping over about halfway through.



All-in-One Breakfast


8 eggs, slightly beaten

6 slices bread crumbs

1 lb. sausage, fried and crumbled

2 C. milk

1 C. cheddar cheese

1 tsp. salt

1 tsp. dry mustard


Mix and put in greased 9x13" pan and refrigerate overnight.  Bake 35 minutes 350F oven until browned.



Griddle Cakes


2 C. corn meal

6 tsp. baking powder

1 T. sugar

1 C. water

1 C. flour

1 1/2 tsp. salt

1 C. milk

2 T. melted butter


Mix in order given and beat thoroughly.  Bake at once, slowly (2 1/2 to 3 minutes).  This same recipe can be used with sour milk instead of sweet by using 2 tsp. of baking powder and adding 1/2 tsp. baking soda.  An egg can be added if desired.





1 1/4 C. flour

2 tsp. baking powder

3/4 tsp. salt

1 T. sugar

2 eggs

1 C. milk

3/4 T. melted lard


Mix and sift dry ingredients.  Separate eggs, beating the whites first and then the yolks.  Add milk and melted lard to the yolks then add to the dry ingredients and beat well.  Fold in whites.  Makes 4.



Apple Fritters


2 eggs

2 C. flour

1 C. sweet milk

1 T. sugar

1 tsp. baking powder



Separate eggs; beat white and yolks separately.  Mix together with flour, sweet milk, sugar and baking powder.  Chop apples and add to the dough.  Fry in hot lard.  Serve with maple syrup.





2 C. flour

4 tsp. baking powder

1 tsp. salt

1-2 beaten eggs

2 C. milk

2 T. melted butter


Mix and cook on a hot griddle.
